1-cup olive oil2½ tablespoons achiote (annatto) seeds**You might as well use the real deal since you can buy it as a ground spice right next to all the other spices...usually bottled as annatto. You can go to: https://www.mexgrocer.com/9641.html and get ½ ounce for $1.50 plus shipping or check your local Latin market.
1. In a small saucepan over medium heat, add the seeds and toast for 2 to 3 minutes just until the seeds begin a steady bubble. Add the oil, reduce the heat to low and cook for 25 to 30 minutes. The oil will become bright orange. DO NOT overheat the oil and seeds, as overheating will turn the seeds black and the oil green thus ruining the oil.
2. Remove the saucepan from the heat and let stand for a short while.
3. Strain the oil through a strainer or coffee filter or by other means.
4. You can keep achiote oil in a jar with a tight lid at room temperature for 4-5 days. Alternatively, store the oil in a glass container in the refrigerator. The oil will keep for several months
Serving Size: Yield: 1 cup or 48 servings of 1 teaspoon each.
