Spinach and Feta Stuffed Chicken Breast

Ingredients
1 large or 2 small boneless, skinless chicken breast1 10 oz. pkg of frozen spinach1/4 cup of feta cheese1 tablespoon of mayo
Directions
1. Preheat oven to 375 degrees
2.Cook frozen spinch according to directions. Drain and allow to cool. Add feta and mayo to spinach. Stir.
3. Cut large chicken breast in half or use 2 small breasts. Slit down middle of each breast and stuff using spinach mixture.
4. Bake for 40 minutes or until chicken is cooked through.

Good served over long grain rice.
