Strawberry Muffins

1 cup rolled oats1 cup buttermilk1 cup all-purpose flour1 tsp baking powder1/2 tsp baking soda1 tsp salt1 egg white1/4 cup applesauce3/4 cup brown sugar1 tsp vanilla1/2 tsp cinnamon (optional)1 cup chopped fresh strawberries (or any other fruit, but keep in mind that will change the nutritional info a little bit)
1. Preheat oven to 375 degrees. Grease and flour or use paper cups in a muffin pan. In a bowl combine oats and buttermilk, set aside for 5 minutes or so. In another bowl combine flour, baking powder , baking soda and salt put to the side.
2. In a large bowl beat together the egg, applesauce, brown sugar and vanilla. Blend in the oat mixture, Stir in the flour mixture just until moistened. Fold in strawberries (or any other fruit). Fill muffin cups a little over 2/3.
3. Bake in the preheated oven for 15 to 20 minutes or until a toothpick inserted in the center comes out clean.

These are so yummy! I didn't have any buttermilk so I substituted it for some skim milk w/ vinegar. I also didn't have any rolled oats so I had to use quick oats. They're definitely satisfying. I'll be making these again. I noticed that the brown sugar measurement is incomplete. I used 3/4 cup. - 2/8/10
