Zucchini Fritters (Martha Stewart Recipe)

Ingredients
2 medium zucchini1 tbsp fresh lemon zest1 tsp salt1/4 tsp black pepper1 garlic clove minced1 tsp onion powder2 large eggs1/2 cup all purpose flour (or a little more as needed)2 to 4 tbsp canola oil
Directions
Grate zucchini and carrot using large hole grater into a bowl. Combine all but flour and oil. Once all ingredients are combined, stir in flour little by little to prevent clumping. Heat oil in pan and begin frying right away. Brown on each side and drain on paper towels after cooking to remove excess oil. Keep warm in oven if needed. Serve with apple sauce, jam or fresh lemon wedges.
