Khoresh Fesenjan (Chicken Pomegranate Stew)

2 T olive oil1.5 pounds boneless skinless chicken breast tenderloin1/2 large onion thinly sliced1/4 pound walnuts, finely ground1 t salt2 C pomegranate juice1/2 t cardamom2 T brown sugar
Heat olive oil in a large skillet over medium heat. Place chicken and onions in skillet, and cook 20 minutes, stirring occasionally. Mix in finely ground walnuts, salt, juice & cardamom. Bring to a boil. Reduce heat to low, cover and simmer for 1.5 hours, stirring occasionally. Mix in sugar, adjust seasoning and simmer 30 minutes more.
EASY ALTERNATE: cook chicken and onions as above, then add ALL the remaining ingredients to the skillet, stir until well blended and heated to a boil. Then pour stew into a casserole dish, cover and bake in 350 F degree oven for 1.5 to 2 hours. Serve over lentils, rice or potatoes.
