White Bean Dip

Ingredients
2 cans (15 oz each) white beans, rinsed and drained2 tbs roasted garlic3 tbs extra-virgin olive oil3 tbs freshly squeezed lemon juiceSalt and pepper1/4 c parsley leaves, to garnish
Directions
1. In a food processor, combine the beans, roasted garlic, olive oil, and lemon juice and process until smooth.

2. Season to taste with salt and pepper.

3. Garnish with fresh parsley leaves and serve with your favorite vegetables.

Serving Size: makes 5-7 cups, 2 tbs/serving
