Southwestern Chicken

Ingredients
(4) 4oz Boneless, skinless chicken breasts (cut up into bite size pieces or strips)(2) cloves of garlic(1/4) cup of minced onion(4) oz can of green chilis(1/4) cup of heavy cream(1/3) cup shredded cheddar or monterey jack cheese(1/2) tsp of salt (or to taste, I usually omit the salt)(1/2) tsp of black pepper(2) tbsp Canola Oil(1/4) cup of chicken stock (optional) or water if needed
Directions
Heat oil in a large skillet

Put chicken in skillet, sprinkle with salt & pepper, saute until brown, adding onions about 1/2 way through

Add garlic and cook for another minute

If needed, deglaze pan with chicken stock or water

Add green chilis and cream, simmer until chicken is done and sauce is thickened

Sprinkle with shredded cheese

Serve when cheese is melted
