Healthy Beef and Bean Tacos

½ lb lean ground beef (10% or less)1 onion, finely chopped2 garlic cloves, minced or pressed3 Tbs. Taco seasoning mix½ C Water1 can Refried Beans 8 Taco Shells1 C Shredded Lettuce1 large Tomato½ C Sour Cream
1. Warm taco shells according to package directions. Keep Warm.
2. Meanwhile, heat a large non-stick pan over medium high heat. Swirl in oil (I never do this, I just brown the meat without oil), then add beef, onion, garlic, and seasoning mix. Cook, breaking up the beef with a wooden spoon, until browned, about 8 minutes. Stir in the water. Cook, until the liquid has evaporated, about 3 minutes. Stir in the beans and heat through.
3. Spoon about ¼ C of the beef mixture onto each taco. Top with lettuce, tomato, and sour cream.
Serving Size: 3 tacos per serving, makes 4+servings
