Orzo Pasta Salad

Ingredients
1 box of Orzo Pasta,1/2 red onion, 25 grams pine numts1 cup baby spinach stems removedfresh basil leavesOlive Oil, Lemon juiceLemon Zest
Directions
Cook the pasta according to directions and run under cold water to cool once cooked.
Assemble other ingredients:
Cut baby spinach leaves and basil leaves into slices
Dice 1/2 red tomato finely
Mix pasta, onion, spinach, basil and pine nuts in a bowl.

Prepare Dressing
Zest 1 lemon, add Olive Oil, and Lemon Juice (salt and pepper can also be added but are not included in nutrional count) Whisk well to combine.

Pour Dressing over salad.

Can add any other additional items - peppers, feta, spring onions etc all work well but are not included in nutritional count for this reciepe.
