The Dukan Oat Bran Galette

Ingredients
1.5 Tbs. Oat Bran1.5 Tbs. Fat free (or low fat, less than 2%) yogurt1 large egg (if you don't have any cholesterol problems)1 egg whiteoptional: sweeten with 1 Tbs. of aspartame for a sweet galette, or for a savory option add a dash or two of salt according to your taste.
Directions
Mix all ingredients thoroughly and pour on to a non-stick pan that has been greased before hand with a few drops of oil, then wiped with paper towel. Cook for 2-3 minutes on each side.

The galettes keep for at least a week in the fridge, but wrap them in foil or cling wrap so that they don't dry out. You can also freeze them as they will not loose their taste, texture or nutritional value.

These are great served first thing for breakfast so you avoid feeling famished mid-morning. I like to add an additional scrambled egg white with a nice slice of smoked salmon to stuff inside the galette, and serve with a dollop of fat-free cottage cheese.

This recipe is allowed in all three phases of the Dukan diet (ie; attack phase, cruise phase, and consolidation phase)
