Zucchini Pancakes

Ingredients
2 C shredded zucchini, drained well3 extra-large eggs2 tbl ground flaxseed2 tbl chia seedsfresh chives*fresh oregano**spices of choice
Directions
In a bowl, mix the zucchini, eggs, ground flax, chia seeds and spices.

Heat nonstick skillet over medium heat. Coat with cooking spray, margarine or butter - your choice**. Pour mixture into skillet using about 1/4 cup each for pancake. Gently cook for 3-5 minutes per side.

**Nutrition info does not include cooking spray, margarine or butter... adjust calories accordingly.
