Ingredients

    1-1/2 lb. chicken breast, skinned and fat removed
    3 lemons, juiced and zested, flesh cut into segments
    1 Tablespoon vinegar (or balsamic vinegar)
    3 teaspoons chopped fresh oregano or 1 teaspoon dried oregano, crushed
    1 medium onion, sliced
    1/4 teaspoon salt
    Black pepper to taste
    1/2 teaspoon paprika

Tips

Using skinless chicken breasts means this tangy dish is lower in saturated fat and cholesterol. You can also use chicken thighs and drumsticks.


Directions

1. Place chicken in 13x9x2" glass baking dish.

2. Mix lemon juice, vinegar, lemon peel, oregano, and onions. Pour over chicken, cover and marinate in refrigerator several hours or overnight, turning occasionally.

3. Sprinkle with salt, pepper, and paprika.

4. Cover and bake at 325º F for 30 minutes. Uncover and bake 30 minutes more or until done.

Yield: 4 servings--Serving Size: One chicken breast with sauce

    Didn't care for the lemon peel taste. Might try again without the lemon peel and adding some basil and minced garlic. - 10/21/07

    Tastes just like Chicken Limone from our favorite Italian restaurant. Hubby, our son and I all love it. We sprinkle capers on top. Very easy to make. - 5/30/08

    We make this all the time but include potatoes cut in wedges in the roasting. Also a couple garlic cloves. - 6/3/09

    I didn't have fresh lemons so I omitted the peel, but it was tasty without it. It was so easy to prepare. My young children thought it was too tangy but the adults liked it. Sometimes chicken can look really white and bland but with paprika on top, it gave the chicken a nice color and appearance. - 7/17/08

    Seemed to border on sour taste--next time will probably add some reduced-sodium chicken broth, halve the lemon juice, and replace the oregano with tarragon. My 6-year-old wasn't fond of it. - 5/9/09
