Vegan Lettuce Wraps

Ingredients
1/2 cup TVP10 oz. fresh Mushrooms, minced1 Tbsp Agave Nectar2 Tbsp Soy sauce (shoyu), low sodium1 Tbsp Lime Juice2 cloves Garlic, minced12 leaves Bib LettuceDipping sauce:2 tbsp Soy sauce (shoyu), low sodium1 tbsp Lime Juice1 tbsp Organic Ketchup.5 tsp Chili Garlic Sauce, Sriracha (WARNING! SPICY!)1/2 tsp Sesame Oil2 tsp. Agave Nectar
Directions
1. hydrate the TVP in 1/2 cup boiling water for 10 min
2. brush 1/4 tsp of sesame oil and 1/4 tsp of olive oil on a skillet
3. stirfry mushrooms and TVP
4. combine agave, soy sauce, lime juice, and garlic and add to skillet
5. cook til heated through

Serve with lettuce and individual bowls of sauce.
Pairs wonderfully with a bowl of steamed edamame pods with garlic sea salt!
