Tomato, Basil, Mozzarella Salad with Italian Bread

1 medium tomato, cubed5 leaves basil, sliced2 oz mozzarella, cubed3 tsp olive oil, divided2 small slices italian bread1/2 tsp salt1/4 tsp pepper
1. Preheat oven to 400 degrees Fahrenheit. Line baking sheet with foil. Cut bread into 1-inch cubes, drizzle with 1 1/2 tsp olive oil, and spread over baking sheet. Bake 10 minutes or until golden, turning once.
2. Combine tomatoes, mozzarella, and basil. Drizzle with remaining olive oil. Add salt and pepper to taste. Toss with toasted bread. Serve immediately.
