Mini veggie fritatas

Ingredients
2c eggwhite or eggbeaters4whole eggs1/2c sauteed zuchinni1/2c sauteed eggplant1/2c wilted greens1/2c diced tomato1oz feta1c soymilk (or reg milk)1 tblsp olive oil (for sauteeing veggies)1/2c onion diced1 clove garlic
Directions
preheat oven to 375 degrees! sautee onions and garlic in olive oil and add zuchinni, cook until tender then add eggplant and cook until tender,add greens and diced tomato. make sure all your ingredients are cooked! Dont forget to season your veggies(salt and pepper)! allow them to cool so they do not scramble your egg/milk mixture. IN another bowl add eggs eggwhites and soy milk and feta, season with salt & pepper ADD egg/milk mixture to a muffin tin that you have sprayed with pan spray.. when veggie mixture is cooled spoon veggies equally into the 12 muffin tins. I cooked them approx 20 minutes but check them between 13-15 minutes, my oven is kind of old.
