Number of Servings: 6

Ingredients

    1. 1 TBLS olive oil

    2. 6 bone-in chicken thighs

    3. 4 med potatoes, chopped

    4. 2 large onions, chopped

    5. 5-7 carrots, chopped

    6. 3 tsp minced garlic

    7. 3/4c chardonnay

    8. 2 cups chicken broth

    9. 2-3 sprigs fresh thyme

    10. juice of one lemon

    11. salt and pepper to taste

    12. 3 medium tomatoes chopped

Directions

1. In a heavy skillet brown both sides of chicken in oil over med-high heat. Approx 15 minutes. Remove chicken and add potato, onion and carrots; cook approx 12 minutes.

2. Return chicken to pan with any juices and add remaining ingredients except tomatoes. Cover and simmer 20-25 minutes. Add chopped tomato and cook additional 5 minutes. 6 servings

I removed the chicken skin after cooking, it makes the dish more flavorful, but you can remove before cooking or even use chicken breasts. Enjoy!
