lemon chicken lemon chicken
Number of Servings: 4

Ingredients

    1lb boneless skinless chiken breast
    1 cup while wheat flour
    1 tbl butter
    2 tbl extra light olive oil
    3 tbl dry white wine (something you drink not cooking wine)
    3 tbl lemon juice
    2 tbl capers

Directions

1.)pound chicken breast flat 1/4" or less. if breast are large cut into smaller sections
2.) put flour on plate or bowl, pat chicken in flour on both sides
3.) heat oil and butter over med high heat in large skillet
4.) when butter and oil start to foam a little add breasts and brown on both sides
5.) remove breast when brown and crisp on both sides. add wine to pan and scrape any bits up with wooden spoon. cook about a minute untill wine boils down a little. add lemon juice and capers cook a minute or so untill sauce boils down a little.
6.) pour wine sauce over chicken pieces and serve.
this goes good with Success whole grain brown rice mix multigrain pilaf.

    Very good. Everyone really loved this and it was easy and quick to prepare. Two modifications: I used boneless, skinless chicken thighs and I skipped the capers (the daughter is not a fan). Served this with rice pilaf, steamed swiss chard and fresh sliced tomato. - 9/5/11
