Introduction

These are very simple to popovers, and puff up initially then fall to have a very light and flaky crust! Great for breakfast, lunch or dinner! Ingredients

    Egg white, 4 serving
    Egg, fresh, 2 large
    Milk, nonfat, .5 cup
    Broccoli, fresh, 1 cup, chopped
    Cheese, Kraft Mexican Style Taco Cheese, 0.5 cup
    Heart Smart Bisquick (mix only), 0.33 cup
    Onions, raw, .5 cup, chopped
    Garlic, 1 clove

Directions

Mix egg, egg white, and milk until well beaten. Add bisquick. Add cheese. Salt and pepper to taste. Sautee 1/2 onion chopped fine and garlic chopped fine and add to egg mixture. Add chopped broccoli. Add onion and garlic. Pour into muffin cups sprayed with Pam. Bake in oven on 375 degrees for 30 minutes. Let cool. (These can easily be frozen once cooled, and tossed in the oven for 1 minute in the morning for breakfast on the go!)
Makes 12 single muffin cup servings, for 56.6 calories each!!!

    Wow! Tasty and great for on the go. I love that they are very low cal and crustless but still have a sort of cruncy outside layer that mimics a shell (because its baked in the muffin pan). I thought it would be ok to omit the salt, but next time I won't. Also, I will experiment with other veg. - 2/10/11
