Carrot & Coriander (cilantro) soup

700g of carrots1 Med Onion2 Knorr Vegetable bouillon cubesWater CilantroSalt & Pepper to taste
Using a food processor, finely chop the carrots and then the onion. I always chop some larger pieces of carrot manually to add to the texture.
Heat the chopped carrots and onion in a large pot, stirring so as not to burn.
Add water to pan so as to fully cover plus some more the carrots and vegetables.
Add the bouillon cubes and bring to boil.
Add 1 Tbsp of cilantro and some salt and pepper as desired.
Lower temp, cover and allow to simmer until desired consistency.
Stir occasionally.
