1 medium egg2 slices reduced calorie whole-wheat bread2 tsp butter2 tsp dijon mustard1 oz cheese of your choices, shredded or sliced1 small tomato, thinly sliced3-5 fresh basil leaves, washed and roughly chopped1 thin slice of red onion, chopped or sliced in halfsalt and pepper to taste
Directions
Heat cast iron or non-stick skillet over medium heat.
Fry the egg (use some cooking spray if necessary to prevent sticking).
As egg cooks, butter one side of each slice of bread, and add mustard to opposite side of one of the slices.
Assemble your sandwich, including the fried egg in this order:
Bread (butter side out)
Cheese
Tomato slices
Basil
Red onion
Salt and pepper to taste
Fried egg

Heat the sandwich on low to medium heat (in the same skillet you used to fry the egg) until golden-brown. Be careful when flipping the sandwich so that it doesn't fall apart.

The French call this "Croque Madam," and it is delicious. The sodium can be cut down by using Ezekiel low sodium bread (0 sodium) and buying Trader Joes low sod. creamy tomato soup (1 c = 140 mg sodium, 90 calories). For someone on VERY limited salt/calories, this is a wonderful tasty option. TY! - 7/11/13

This is very good. Not really a grilled cheese with 1 ounce of cheese, but still a very good sandwich. - 4/22/12

Way too high in sodium, fat, calories and cholesterol to even try. And never found tomato soup for 25 calories - 9/20/11

This is definitely an improvement over the traditional grilled cheese sandwich. Very tasty, while still giving a grilled cheese flavor. I used an easy over egg, and sopped up the drippings with what was left of the bread. I will definitely make this for my wife this weekend. - 9/20/11

More of an egg and cheese grilled Sammie. But tasty nonetheless. Great meal to go or quick, healthy fare (paired with a veggie side or tomato/vegetable soup) after a long day. - 8/19/17

The pictures of the grilled cheese and the pizza sandwiches are identical. Which recipe does the picture really go with? - 8/4/15

Was decent. Added some grilled veggies in the mix instead of the egg. The mustard and basil really helped with the flavor - 6/18/15

I definitely want to try this! I'll skip the butter spread though (I never use it) and the mustard, as I'm not keen on sauces. Thanks for sharing! - 12/3/14

How about instead of a fried egg a 3 or 6 Tbsp egg white omelette? Instead or regular cheese, veggie cheese (like the Go Veggie products)?
I bet we can lower the sodium and carbs and it will taste great as well! How much would be the total calorie and Fat & sodium count??
No butter for me Please! - 5/5/14
