Italian Christmas cookies

Ingredients
1 c butter2 c Splenda baking blend15 oz container part skim ricotta cheese3 tsp vanilla1 tsp baking soda4 c whole wheat flourIcing:1/4 c butter2 oz milk2 tbsp vanilla
Directions
Preheat oven to 350. Mix al of cookie ingredients well until dough sticks together into a big ball. It will be sticky. Drop tspfuls on an ungreased cookie sheet. Bake 10-12 mins or until the bottoms turn golden brown. Let cool for 1 min, then transfer to wire racks to cool completely.

Makes about 6 1/2 dozen cookies.
