Laurie's Cream of Tomato Soup

Ingredients
1 Can of Contadina Diced Tomatoes in Tomato Juice into a large pot (102 oz. / 6lb 6oz) 1tbs of Italian Seasoning 1/2 tsp of Black Pepper 1 1/2 cups of cottage cheese 2.5 cups of 1% Milk 1 wedge of Laughing Cow Light Creamy Swiss Original Cheese
Directions
1 Can of Contadina Diced Tomatoes in Tomato Juice
into a large pot (102 oz. / 6lb 6oz)

Turn heat on medium, to med, high

Add 1tbs of Italian Seasoning (stir)

Add 1/2 tsp of Black Pepper (stir)

Add 1 1/2 cups of cottage cheese (stir)

Add 2.5 cups of 1% Milk (stir)

Simmer for 10 min. then turn off heat.

Using a slotted spoon remove some of the tomato chunks & put in a blender to puree. Do this a few times. Use another bowl to put pureed tomatoes in.

Do not puree all the tomato chunks, leave some in the soup.

Then return the tomato puree back into the soup, stir.

Put heat back on, when hot add the 1 wedge of laughing cow cheese & stir until melted into the soup.

Makes 13, 1 cup servings.
