Turkey Bacon and Havarti Mini Quiches

100 grams prepared pie dough1 medium egg1/2 cup lowfat milk1 clove garlic, minced3 slices turkey bacon, diced1/2 cup diced red bell pepper1/2 cup havarti cheese, shredded1/4 cup parmesan cheese, shredded
Pre-heat oven to 375 degrees spray a muffin pan with non-stick spray. Roll pie dough and use a can or cookie cutter to cut out 6 rounds and press into muffin pan. Bake the crusts for 10 minutes until just set and remove from the oven.
While the crusts are baking, heat a small pan and add bacon. Cook for a few minutes until the pieces start to color. Add garlic and red peppers. Cook a few more minutes, stirring occasionally, until peppers are just soft. Spoon bacon mixture evenly into the crusts, top with havarti cheese.
In a small bowl beat the egg with milk, a dash of salt, and a few grinds of fresh black pepper. Pour the egg mixture evenly into the muffin cups, and top with a pinch of parmesan cheese.
Bake at 375 for 20 minutes, or until set.
Makes 6 quiches.
