Ruth's Breakfast Omelet (Dukan Style)

Ingredients
2 or 3 Large eggsExtra Lean Ham (1 slice, diced)onionssweet peppersmushroomsvegetable oil spray (just enough to coat the pan)2% American or Cheddar cheese (1 oz) Shredded1 or 2 tablespoons of skim milk
Directions
Dice vegetables and Ham.
Coat pan with cooking spray
Add meat and vegetables and stir occasionally until heated through.
Whisk together eggs and milk
pour over vegetable and ham mixture
Let cook on medium heat until bottom is set (about 3 minutes) without stiring
If pan is oven safe, you can turn on the broiler and cook top of omelet without having to flip the omelet. If not, attempt to flip over the omelet and let the other side cook till eggs are set.
If in broiler, once top is set sprinkle cheese on top and let it melt. If on top of stove, top with cheese and cover pan with lid for a minute or until cheese is melted.
Fold over and serve hot.
