Toasted Oat Granola Bars

3 cups rolled oats1/2 cup shredded sweetened coconut1/2 cup dried dates, chopped1/2 cup dried apricots, chopped1/2 cup raisins1/2 cup sunflower seeds (hulled, unsalted)1/2 cup almonds, chopped2/3 cup coconut oil2/3 cup brown sugar, packed1/4 cup honey1/4 cup corn syrup1/2 tsp vanilla
In large skillet (in batches) toast oats, coconut, almonds and sunflower seeds. Transfer to large bowl; cool. Add dates, apricots, raisins and seeds. In saucepan combine remaining ingredients and bring to boi. Boil for 2 minutes, stirring constantly. Remove from heat; add vanilla. Pour over oat mixture and stir to coat. Scrape into parchment lined 9x13 pan. Pack with the back of a spoon. Bake 350 F until golden (20 to 25 minutes.) Let cool in pan. Cut into bars. Store in an airtight container for up to five days.
