Introduction

This recipe is on the back of Bob's Redmill whole ground flaxseed meal. This recipe is on the back of Bob's Redmill whole ground flaxseed meal.

Ingredients

    1.5 cups flour
    3/4 cup flaxseed meal
    3/4 cup oat bran
    1 cup brown sugar
    2 tsp baking soda
    1 tsp baking powder
    1/2 tsp salt
    2 tsp cinnamon
    1.5 cups carrots, shredded
    2 apples, shredded
    1/2 cup raisins
    1 cup chopped nuts
    3/4 cup milk
    2 eggs, beaten
    1 tsp vanilla

Directions

Mix together flaxseed meal, flour, oat bran, sugar, soda, powder, salt, and cinnamon in a large bowl. Stir in carrots, apples, raisins, and nuts.

Combine milk, beaten eggs, and vanilla. Pour liquid ingredients into dry ingredients. Stir until moistened.

Fill sprayed or lined muffin cups 3/4 full. Bake for 15-20 minutes at 350 degrees.

    These are fabulous tasting. Moist and good for you too! I don't even have to put butter on them. Eat them plain with a cup of coffee for breakfast! - 4/9/07

  • These are great! I added 1c of walnuts and next time I think I'll double that. I also sprinkled the tops with flax seeds, which looks nice, I was worried they'd burn but they didn't. Glad to hear that they freeze well, too! - 1/5/11
