Black Bean Enchilidas

Ingredients
8 Mission Yellow corn tortillas2 10oz cans Old Elpaso enchilida sauce1/2 small onion, chopped1 tbs olive oil2 15oz cans black beans, rinsed and drained1 pkg Birds Eye Steamfresh gold and yellow corn, prepared according to package directions1 1/2 cup fat-free cheddar cheese, shredded1 med avacado, peeled and sliced1 cup tomato, chopped1 cup lettuce, chopped1/2 cup Pace Salsa
Directions
Saute onion in olive oil. Rinse and drain beans. Mix onion, beans, corn and smal amount of enchilida sauce and heat on stovetop. Fill each tortilla with above ingredients and cheese in equal parts. Spray baking dish with olive oil spray. Roll each tortilla and top with remaining enchilida sauce and any remaining cheddar cheese. Bake 350 oven for about 30 minutes or until heated through. Top with lettuce, tomato, and fresh avocado, if desired.
