Quinoa with Ham and Mixed Vegetables

1/2 dry quinoa1 carrot, diced1 1/2 chopped onions2 chopped celery stalks1 ripe tomato, chopped4 1/2 oz. of extra lean ham, diced2.5 oz of crumbled feta cheese2 tbsp olive oil
Cook quinoa in rice cooker or on stove top adding 1 cup water to dry quinoa. Heat olive oil in frying pan or skillet. Add remaining ingredients except feta cheese. Cook until tender. Add cooked quinoa and feta cheese. Stir to combine.
