Hungry Girl Cheesy Bean Breakfast Quesadilla (adapted)

Ingredients
Two corn tortillas (small ones)1/2 c pinto beans (smashed with a fork)1/4 c shredded cheese1/2 c egg beaters1/4 c rotel tomatoes (green chili and lime and cilantro)
Directions
Heat oven to 425. Cook the egg beaters in a skillet with a little cooking spray. Set aside. Put the cheese on one tortilla and the smashed beans on the other. Place the tortillas on a cookie sheet and place in over for about 4 minutes to melt the cheese and warm the beans. Take them out of the oven and cover the beans with the egg beaters. Stack the cheese tortilla on top of the other bean/egg tortilla (with cheese side inside). Place the whole "sandwich" into the skillet for approximately 2 minutes on each side to crisp up the tortillas. Place it on a plate and over with tomatoes. Yum!
