Scallops with Oriental stir fry

Ingredients
4 1/2 ounces sea scallops1/2 cup leeks1/4 cup water chestnuts1 & 1/2 cups mushrooms, sliced1 tsp. olive oil1/2 cup snow peas1/2 cup bamboo sprouts1/2 cup bean sprouts2 tsp. soy sauce
Directions
Saute vegetables in olive oil over medium heat until tender. Add scallops and cook until done. While cooking, add the soy sauce. Serve while hot.

    Good but did not have the bamboo sprouts or leeks to use. Still tasted great! - 2/26/08
