Ingredients
2 cans (15 oz each) gabanzo or navy beans, rinsed and drained1 pkg (10 oz) frozen spinach1 lb pork tenderloin or 4 skinless, boneless, chicken breasts2 cans (14 1/2 oz each) chicken broth, 1/3 less sodium1 cup water1 can (14 1/2 oz) stewed tomatoes1 lg sweet potato (peeled and cubed)1 lg onion, chopped1 red or yellow bell pepper, seeded and chopped2 tsp paprika2 tsp ground cumin1/4 tsp ground cinnamon1 tsp dried basil1/2 tsp salt8 grinds fresh ground pepper8 dashes cayenne (opt)
Directions
Cooking time is minimum.

Add all ingredients to slow cooker.

Cover and cook on LOW 10 to 11 hours or on HIGH 5 to 6 hours until beans are tender.
