Roasted Red Pepper, Carrot & Pear Soup

Ingredients
2 onions, peeled and chopped8 carrots, peeled and chopped5 pears, peeled, cored, and chopped3 cups roasted red peppers, seeded and chopped6 Tbsp butter or olive oil2 cups coconut milk (or whole milk, or whipping cream)Salt and ground pepper to taste
Directions
1. Cook onions and carrots in butter or olive oil for 10 minutes, or until onions are soft.
2. Add broth, peppers and pears and simmer for 20 minutes, or until carrots and pears are soft.
3. Add milk, salt and pepper, and puree.

Serving Size: makes 16 cups
