3 bananas mashed1 egg1/2 cup ground flax1/2 cup cranberry sauce or chopped fresh/frozen cranberries (optional)zest of one orange (optional)juice from one orange (or 3 tbsp of any other liquid)1 cup whole wheat flour1/2 cup white flour1/2 cup oatmeal1 tsp baking soda1 tsp baking powder1/2 tsp salt1/4 tsp ground nutmeg1/2 cup chopped walnuts (optional)
Combine wet ingredients. Include the ground flaxseed.
Sift together dry ingredients.
Fold wet into dry without over mixing. Fold in walnuts.
Bake in greased muffin tins for 18-20 min at 350.
