Cream of CHicken and Rice Soup

Ingredients
1/4 cup butter1/4 cup onion1/4 cup carrots1/3 cup celery1 tbsp parsley1/4 cup whole wheat flour4 cans chicken broth3/4 cup milk4 oz cream cheese1 egg yolk2 cups cooked chicken1 cup ricedash of nutmeg1/8 tsp white pepper
Directions
melt butter in 3-4 qt saucepan, add onions carrots, celery, and parsley. saute on low for 5 mins. cover and cook for 10 mins. remove from hear and stir in 4 cans of chicken broth return to medium heat. bring to a boil then reduce for 5 minutes. then blend milk, cream cheese, and egg yolk and slowly add to soup mixture along with chicken, rice, nutmeg, and pepper. heat but do not boil. can also add broccoli.
