Mixed Bean Masala

1 cup uncooked brown rice1 can 19 0z mixed beans ( drained and rinsed)1/2 cup chopped onion1 tbs lemon juicepinch of sea salt2 buds of garlic ( shredded)1 Jalapeno pepper finely chopped2 tbs olive oil2 tbs Indian Masala spice1 tsp dry mustard
cook rice ( 2 cups of water to 1 cup of rice app 15 mins cooking time)
heat oil in 3 qrt pot medium /low heat
add onions, garlic,dry mustard , jalapeno lemon juice and salt
cook until onions are translucent
add drained and rinsed beans
add masla
heat beans for 5 mins
add cooked brown rice
serve with half a slice of naan bread
Serving Size: makes 4 1 cup servings
