Solo Almond Macaroons

1 7oz tube Almond paste (recipe calls for 8, but 7 works just fine)2 egg whites1 cup sugar (recipe calls for more, but they don't need it)About 1oz pistachios (for garnish. You can use almonds, pine nuts or anything you want)
Preheat oven at 325.
Put everything in the food processor and blend till smooth.
Drop spoonfuls 1 inch apart on cookie sheets with parchment paper (these cookies stick). Stick a pistachio in.
Bake for 20 minutes, or till lightly golden.
Let sit on pans for a little while (a good 5 minutes) before moving to racks. They will stick and you will lose half.
