Asparagus, Crimini, and Purple Onion Fry

2 large bunches Asparagus (60 stalks)1 Large Purple Onion1 box Crimini Mushrooms (yields about 1 cup cooked)Canola Oil spray (likely much less than a 1/2 TBS)
Cut the onion into 1/4 inch wedges, place in pan, spray with Canola Oil, sprinkle salt and pepper. Broil for 20 minutes until carmelized, remove to a bowl. Slice Mushrooms to desired thickness, spray with Canola Oil and broil 10 minutes, pour off liquid, continue broiling for 5 minutes, add to bowl of onion. Slice Asparagus into 2 to 3 inch lengths, spray with Canola Oil, sprinke with salt and pepper, broil 15 minutes (or leave whole and cook them on the BBQ Grill). Add to bowl with onions and mushrooms. Serve 3 oz.
