Introduction

Ingredients

    Ingredients:

    1.5 C (one can) cannellini beans, rinsed and drained
    1 C fresh spinach
    1 Tbsp. olive oil
    Half a large ripe avocado
    Juice from 1 lemon
    2 cloves garlic
    Salt & pepper to taste

Directions

Toss it all in a food processor and whirl away! Enjoy as a dip with crackers or veggies, or as a spread on sandwiches (it's great with with smoked salmon!).

    Cannellini beans are white kidney beans. They are lower in fat and calories than the garbanzo beans (chick peas) that are normally used to make hummus. Adding spinach to the mix is a really great idea, too. - 11/23/10

    Tried this using garbanzo beans (I'm not sure what cannellini beans are), adding a half cup of plain yogurt, and using two whole small avocaodes, and thought it was great, such a pretty color. Next time I'm going to add a cup or so of chopped tomatoes, or pico de gallo... maybe today! - 8/5/10

    Delicious! It was a big hit with me and my teenagers. Excellent as a dip with veggies or chips, a spread on a sandwich, or on a taco salad. Will definitely make again. - 7/19/10

    This is really good. My son liked it even better when I added a couple of Jalapeņo peppers to it. I've made it twice.. liked it even more the 2nd time. You would never know there is Spinach in this.It's so easy to make,which is good, I'll make this often! Husband gives 5 stars too! - 8/10/10
