Simple Oven-Roasted Vegetables

Ingredients
1/2 cauliflower head cut into approximately 2" pieces1 spear of broccoli cut into florets2 medium sized red/new potatoes cut into approximately 8 pieces eachJuice of 1/2 lemon1t garlic powder1t salt1t freshly ground black pepper
Directions
Pre-heat oven to 400 degrees.
Line rimmed cookie sheet with foil and spray with non-stick spray.
Wash vegetables and cut as directed.
Put vegetables in bowl and add lemon juice and olive oil.
Add salt, pepper, and garlic powder.
Toss until vegetables are well-coated.
Roast in pre-heated oven for 30-45 minutes or until fork tender.
