Thai Drunken Chicken

Ingredients
1 tbsp veg oil1lb chicken breast cut into thin strips.25 cup minced garlic3 julianned serrano peppers 2 juianned red/orange/yelow bell peppers3 thick slices of onion cut legnthwise then julianned1/3 cup of chic broth1.5 tablespoons of thai fish sauce1.5 teaspoons of soy sauce with a packet of splenda added to it20-40 Thai basil leaves to taste
Directions
heat oil till pan is smoking then carefully add all peppers, onion and garlic stir fry for about a minute. Add chicken stir till not pink any more. Add soy and fish sauce stir about 3 minutes. Add stock/water and basil leaves till leaves wilt. Serve over jasmine rice, rice noodles, spinach, quinoa
