Lima Bean, Carrot, & Swiss Chard Soup (vegetarian)

1 tbsp Olive Oil1/2 large onion, diced3 Large Carrots, diced1 cup Swiss Chard (cut into bite sized pieces, approx. 1 medium bunch)3-4 cups vegetable broth (I used closer to 4 cups of low sodium veggie broth)1 can Lima Beans1 sprig Fresh Rosemary1 bayleaf1/2 cup dry Israeli Couscous1 tsp. Sriracha (hot chili sauce--optional)salt and pepper to taste
Heat a large skillet or pan and add olive oil. Add onion and cook for 2-3 min. Add carrots and cook 2-3 min.
Add swiss chard, lima beans, broth, rosemary, and bayleaf. (I used a whole sprig of rosemary and then fished it out later with the bayleaf).
Bring to a simmer for 5 minutes.
Add couscous and (optional) sriracha. Cook for an additional few minutes (use cook time for your couscous... around 8 minutes).
Remove rosemary and bayleaf before serving. Salt and pepper to taste.
