Onion and Green Pepper Fritata

5 Jumbo Eggs, beaten2/3 small onion, chopped (80g)1 Green pepper, chopped (150g)2 tsp Olive oil1/2 cup 2% Shredded cheddar
Saute onion and green pepper in olive oil.
When cooked, add eggs. Don't stir. Let the eggs cook until nearly done, swirling the pan to spread eggs around. When almost done, put pan in broiler for a few minutes until eggs are cooked. Add cheese on top and broil for another minute or two until cheese is melted and starting to brown.
