Hearty Potato Soup (slow cooker)

Ingredients
Russet Potato (NI per 1 oz/28 g), 40 serving - peeled and cut into 1 inch pieces.*Onion (Yellow), 2 medium, choppedCarrots, raw, 1 cup, chopped Celery, raw, 1 cup, diced *Trader Joe's Organic Free Range Chicken Broth, 4 serving Rosemary, 1 tbsp, fresh, choppedFresh Chives, 1 tbsp chopped Basil, 1 tbsp Half and Half Cream, 1.5 cup (remove)
Directions
Place all ingredients other than half and half in slow cooker. Add salt and pepper to taste. Cook on low for 8 hours, or high for 4. With one half hour left on the time, stir in half and half.

If you desire, prior to adding cream, mash/smash up some of the potatoes for a thicker soup.

Serve with cheese, bacon, more fresh chives etc. as toppings.

Serving Size: makes 6 servings, approx. 1.5 cups each.
