1 cup bread crumbs (I use gluten free)1/2 cup 1% milk1 lb ground turkey1 lb ground beef (extra lean)2 cups minced portabella mushrooms (170g)1 cup shredded carrot (100g)1/4 cup chopped parsley (11g)4 tbsp tomato paste1/2 tsp dry mustard1 tbsp packed golden sugar (or brown sugar)1+1/2 tsp thyme leaves (dried)1/2 tsp sage2 large eggs1 tbsp Worchestershire sauce
Serving Size: makes 24 mini meatloaf muffins
In a large bowl, soak breadcrumbs in milk until all milk is absorbed.
Add all other ingredients to bowl and mix thoroughly.
Fill muffin tins with mixture to level (or just under depending on how deep your tins are)
Bake at 350 degrees C for 30 min.
