Heavy Whipping Cream, 3 cup, whippedGranulated Sugar, 2 cup Vanilla Extract, 1 tsp or 1 vanilla beanEgg Yolk, 6 large1/2 tsp salt
Preheat oven to 400 F.
Heat cream with vanilla. In another bowl, beat egg yolks, salt and all but 9 tsp sugar (reserve).
pour into 1/2 cup ramekins. Place ramekins in roasting pan bain marie (fill roasting pan with tepid water until the water is 1/2 way up the sides of the ramekins) Bake 35 - 40 minutes. Remove from oven, and bain marie. Allow to cool. Refrigerate overnight. Sprinkle each with 1/2 tsp in sugar. Using a torch, melt sugar, repeat. Refrigerate.
