Ingredients

Chocolate Pudding (stuffing)
2 quart pan for pudding.
3 Tbs Dark Chocolate powder
1/4 cup corn starch
2.75 cups Milk
1/2 cup sugar
1 Tbs butter
1 tsp vanilla
if you want extra wow add alittle nutmeg, Cinnamon, and cayane if you want- to taste.
WHipping cream (optional)
1/2 cup of sugar
1 cup whipping cream
1 tps vanilla
(blender is helpful. - whisk works... BURN THOSE Calories)
Crepes themselves. (I add 3 tbs of dark chocolate powder)
2 EGGS
1 cup milk
2/3 cup flour
1 pinch salt
1 1/2 teaspoons vegetable oil (i use olive oil)
Crepe pan, Spatula, butter or oil (to grease pan)
and stove top needed. ;)
Tips
Calories do not count whipping cream and pudding.
pudding serves 4- (can be used more sparingly!)

Directions

Mixed the eggs, flour, salt, milk, oil together with a whisk. Until smooth. Let sit for an hour. (can shorten the hour but theyre not as fluffy)
heat crepe pan until butter or oil sizzles lightly, pour about a Table spoon of batter in the hot pan and give it alittle swish to even it out.- give about 1-2 mins and flip. - Continue until batter is gone.
in separate pot- have on low- medium low.
Pour milk, vanilla, butter, sugar, starch, and chocolate powder. with a whisk, mix together. (DO NOT LEAVE pot- chocolate pudding gets a burnt flavor if you leave it alone!!)
continue stiring. as it begins to bubble turn the heat off. KEEP stiring. Take it off the heat. Let thicken.
Let it cool for about an hour.
WHipping cream. Add cream, sugar, and the vanilla-
Whisk it together until makes peaks this means it pulls up with the whisk (a blender makes this take minutes!)
My way for kaz's chocolate crepes.
Add a Table spoonful of chocolate pudding, roll the crepe up, add a dolop of whip cream.
And ZOMG! Bangin Chocolate Desert, I made this up for my new years day party. Friends
Absolutly Loved them. :-)) I started adding alittle spice to make them more grown up and give it alittle Spanish/Inca twist.
