Low Fat Chicken Stir-fry

1 Chicken Breast (deboned, and trimmed)1 12 oz Bag Frozen Stir-fry Vegetables1/4 cup soy sauce1/4 cup water1 clove garlic1 tsp ground ginger1 tsp sugar1 tsp olive oil
Cube the chicken. Add the soy sauce, water, garlic, ginger, and the sugar. Set aside and marinate for 3 hours.
heat a cast iron skillet with oil add the chicken and brown it, but save the liquid. When the chicken is browned add the vegetables and the liquid back to the chicken and mix. Allow it to cook for 10 minutes or until vegetables are cooked.
can be served over white rice
