Saffron Seafood Mock Risotto

Ingredients
*Trader Joe's Frozen Seafood Blend (Shrimp, Calamari, Scallops), 110 gram(s) (remove)Cauliflower, raw, 2 cup (remove)*Extra Virgin Olive Oil, 2 tbsp (remove)Butter, salted, 1 tbsp (remove)Saffron, 1 tbsp (remove)*Holland House Sherry Cooking Wine, 2 tbsp (remove)Garlic, 1 clove (remove)Water, tap, .25 cup (8 fl oz) (remove)
Directions
Shred cauliflower. Roast on parchment to desired tenderness. Saute garlic. Add sherry. Add 1/2 butter. Add seafood and cook until done. Strain seafood, reserve liquid. Put liquid in pan and reduce by 1/2. Add remaining butter, cauliflower, and water. Toss. Add seafood and saffron. Toss until everything is yellow and yum.
