Brussels Sprouts, Gordon Ramsay Style

2 lbs brussels sprouts4 slices of baccon (Gordon used prosciutto, baccon's easier to find), choppedsalt and pepper to taste1 Tbsp. lemon juice1/2 cup chopped chestnuts (if desired)
Trim the bottoms and remove outer leaves of brussels sprouts. Cut in half. Blanch in salted boiling water for 2 minutes.
Fry chopped baccon in frying pan until crispy. Remove and drain on a paper towel. Drain grease, leaving 1 Tbsp remaining in pan.
Remove brussels sprouts from water and saute in frying pan until crisp tender. Season with salt & pepper. Add baccon back in pan. Add chopped chestnuts if desired.
Add lemon juice 20 seconds before removing from pan.
Serving Size:�makes 6 1-cup servings
