Morroccan Quinoa and Chicken Salad

Ingredients
1 cup dry quinoa1 cup cooked chickpeas1 skinless chicken breast, cooked and chopped1/2 cup chopped red onion1 Tbsp ground cumin1/2 Tbsp paprika1 tsp cinnamonSalt & pepper as needed
Directions
Cook quinoa as per package directions. Combine all ingredients and chow down!

Also yummy: Throw in some fresh mint or parsley. Could add some raisins or chopped dried apricots. Would also be good with olives!
